Cashew butter feels so indulgent, it’s rich and decadent and has a similar texture and flavour to creamy melted white chocolate. Cashew nuts are particularly high in copper which help to aid the absorption of iron. These minerals are essential in the formation of red blood cells which help to support a healthy immune system and strong bones, preventing anaemia and osteoporosis.
Store in the cupboard in a glass jar and use as a dip for fruit, on toast or drizzled over breakfasts or desserts.

Ingredients
- 400 g Cashew Nuts
Instructions
- Preheat oven to 160°C.
- Evenly spread out the cashews in an ovenproof dish.
- Roast for 15 minutes.
- Using a high speed blender, blend cashews until smooth. Scrape down the sides every few minutes, it will take 15-20 minutes.
