“WHAT’S UP DOC?”
Vegetable crisps are a great substitute for any conventional crisp lover. You can season these with any of your favourite flavours.
Brilliant for using up a bunch of soft carrots which would have otherwise gone to waste. It is a good idea to make more than you think, as they do shrink when cooking. A nutritious snack or great sprinkled on top of salads for an extra added crunch.

Carrot Crisps

Equipment
- Vegetable Peeler
- Oven
Ingredients
- 3 Carrots
- 1 tbsp Extra Virgin Olive Oil
- sprinkle Salt
Instructions
- Preheat oven to 120°C.
- Using a vegetable peeler peel thin slices of carrot.
- Spread evenly onto ovenproof dish with extra virgin olive oil and salt.
- Roast for about 2 hours, turning half way through.
