CRACKIN’ SLOW ROAST PORK
There is quite an art in creating crispy crackling. In our experience, this comes down to making the pork fat as dry as possible, and by adding a very generous amount of salt.
When slow-roasted, the tender meat becomes easily pulled apart. Equally as mouth-watering as part of a roast dinner, or served in a bap. However your choose to eat yours, a great dollop of homemade juicy apple sauce and herby stuffing are the best accompaniments.

Ingredients
- Pork Joint
- 1-2 tbsp Salt
Instructions
- Preheat oven to 220°C.
- Dry off fat and sprinkle and rub salt thoroughly into the fat.
- Cook in dish without the lid for 30 minutes.
- Then put lid on and turn temperature down to 120°C for 4-5 hours.
- If the crackling hasn't crackled enough you can turn the oven back up again to 220°C without the lid for a further 30 minutes.
