WAKE UP AND SMELL THE BACON
Aubergine bacon?! Ok, so it doesn’t taste exactly like bacon. However, the umami flavours from the tamari mix with the meat-like texture of the aubergine that results in something which, some say, tastes better than bacon! Nitrates found in traditional bacon should be avoided as they could be carcinogenic. You can purchase nitrate-free bacon, although it isn’t as widely available. Step in – aubergine bacon! Plus, another great way to add some more vegetables to your plate. Win-win.

Aubergine “Bacon”

- Oven
Ingredients
- 1 Aubergine
- 2 tbsp Extra Virgin Olive Oil
- 2 tbsp Tamari
- 2 tbsp Worcestershire Sauce
Instructions
- Pre-heat oven to 140°C.
- Slice aubergine length ways into thin slices.
- Place in ovenproof dish and cover with olive oil, tamari and worcestershire sauce.
- Cook for 40 minutes, turning half way through.
