GO BANANAS LOAF
A deliciously moist cake-like bread that’s so healthy it’s good any time of day! This is an extra special recipe as it is free from the most common inflammatory ingredients: sugar, wheat and dairy, plus it’s brilliantly balanced in carbs, protein and fats. Over-ripe bananas with a few dark spots are the ideal choice for baking as they make a sweeter, tastier loaf.
Enjoy simply sliced or spread with your favourite nut butter or chocolate spread for an easy ready-made breakfast or pick-me-up snack.

Balanced Banana Bread

- Hob
- Electric Whisk
- Oven
Ingredients
- 150 g Ground Almonds
- 100 g Coconut Oil
- 6 Eggs
- 1 tsp Baking Powder or ½ tsp Baking Soda + 1 tsp apple cider vinegar
- 200 g Banana (2 medium bananas)
- pinch Salt
Optional Add-Ins
- 1 tsp Cinnamon
- handful Chocolate Chips
Topping
- 1 Banana
Instructions
- Preheat oven to 180°C.
- Pre-line baking tin.
- Combine ground almonds and baking powder.
- Melt coconut oil in saucepan, then add to dry mix.
- Mash 125g banana (or 1½ banana) thoroughly and add to dry mix.
- Whisk eggs until bubbles form, then add to dry mix.
- Cut the remaining ½ banana into slices or chunks and stir through the mixture.
- Pour into pre-lined tin.
- Cut the third banana in ½ length ways and place on top of mixture.
- Bake for 40 minutes.
