SWEET AND STICKY SIDE DISH
A patient slow simmer can completely transform raw potent onions, which are sometimes hard to digest, into a soft, sweet and sticky side dish. A dash of balsamic vinegar enriches their natural sweetness and creates a caramel-like glaze. Onions are crammed full of antioxidants, the dark hue in red onions is due to anthocyanin which is known to reduce inflammation.
Great in burgers, as a pizza topping, alongside steak, or, my favourite, loaded into sweet potatoes with melted goats cheese.

Caramelised Balsamic Red Onions
Equipment
- Hob
Ingredients
- 2 Red Onions
- 2-3 tbsp Extra Virgin Olive Oil
- 3-4 tbsp Balsamic Vinegar
Instructions
- Warm olive oil in pan on a low heat.
- Thickly slice red onions and slowly cook, stirring regularly.
- Add in balsamic vinegar after about 10 minutes and continue to simmer for a further 10 minutes or until caramelised.
