BUTTER MASHED ROOT VEG
A comforting side dish that adds more colour, more variety and more veggies to your plate! Use this mash as an addition to a potato dish or as a lower glycemic swap. Swede, also known as rutabaga, is a root vegetable that is botanically a cross between a turnip and a cabbage. It has a sweet, buttery flavour, boasts half the carbs of potatoes and 25% more vitamin C.
A creamy side dish that pairs perfectly with roast dinners, pies, sausages or as an alternative topping to cottage or shepherd’s pie.

Carrot and Swede Mash

- Hob
Ingredients
- 2-3 Carrots
- ½ Swede
- 1 tbsp Butter
Instructions
- Cut equal amounts of carrots and swede into small cubes.
- Steam for about 10 minutes, until very soft.
- With a vegetable masher, mash to combine until desired consistency.
- Stir through butter.
