SMASHING SWAP FOR MASHED POTATOES
Cauliflower contains some of almost every vitamin and mineral that you need. And by steaming the florets, rather than boiling, you retain most of the nutrients. Cauliflower also has a naturally low glycemic load making it a great swap for mashed potato. Once cooked and blended this mash is so creamy and smooth, you would honestly find it hard to tell the difference.
Perfect paired with sausages and gravy, or to top a fish or cottage pie.

Cauliflower Mash
Equipment
- Hob
- Food Processor
- Oven
Ingredients
- ½ Head Cauliflower
- 1 tbsp Butter or vegan butter
- 1 tsp Dijon Mustard optional
- 1 tsp Wholegrain Mustard optional
- handful Parsley
Instructions
- Cut cauliflower into small pieces and steam until soft.
- Blend in a food processor with butter, dijon mustard and wholegrain mustard until smooth.
- Serve straight away, or put in oven at 180°C for 10 minutes to form a crispy top.
- Top with fresh parsley.
