SIDE DISH
MASHED POTATO ALTERNATIVE
Celeriac is a root vegetable that is commonly overlooked and underused. Also known as celery root, celeriac makes a wonderfully creamy mash with a slightly nutty flavour, plus it’s a rich source of vitamins C, K and fibre. Celeriac mash makes a great low-carb substitute to mashed potatoes with a low glycemic load of 35, compared to potatoes with a high glycemic load of 86, so is much better at maintaining blood sugar balance.
Great served with roast dinners and stews or as an alternative pie topping.
