THREE INGREDIENT VEGGIE PATTIES
These little savoury cakes are so simple and versatile and can really amp-up an average sweet potato. Cumin is a powerful spice that is rich in antioxidants, aids digestion and is particularly high in iron, one teaspoon provides nearly 20% of your RDI.
For a convenient time-saver, make up a bunch of these patties and store in the fridge to enjoy throughout the week. Use as a delicious side dish, an on-the-go snack with hummus, a wholesome addition to salads, as a base in place of bread or even as a meat alternative burger.

Moroccan Spiced Sweet Potato Cakes
Ingredients
- 150 g Sweet Potato 2 medium sized
- 1 Red Onion
- 1 tsp Cumin
- pinch Salt
- pinch Pepper
Instructions
- Bake sweet potatoes at 160°C for 40-60 minutes.
- Finely slice the red onion and fry in olive oil until soft.
- Scoop out the flesh from the sweet potatoes (leaving the skins).
- Combine the cooked sweet potato, red onion, cumin, salt and pepper. Form 2 patties.
- Bake in the oven at 160°C for 20-30 minutes, turning half way. Or, fry in a pan for 2-4 minutes on either side until cooked.
