I love the smell of tomatoes fresh from the greenhouse, it reminds me of Summer days at my Grandparents. You just can’t beat your own seasonal homegrown produce – when compared to the out of season imports, they taste like a different species! Tomatoes are one of our best sources of an antioxidant called lycopene, which also gives the tomatoes their bright red colour. Roasting tomatoes not only brings out their flavour, but increases the amount of lycopene our body absorbs.

Roasted Tomatoes
Equipment
- Oven
Ingredients
- 2 Tomatoes
- sprinkle Dried Basil
- pinch Salt
- pinch Black Pepper
Instructions
- Preheat oven to 160°C.
- Cut tomatoes in half.
- Sprinkle with basil, salt and pepper.
- Roast for 40-50 minutes.
