GET MINTED NOT WASTED
Mushy peas are Britain’s favourite accompaniment to traditional fish and chips. However, this is no traditional recipe as it champions a vegetable stem which is regularly thrown out. Broccoli stalks – which are often chucked away – suddenly become far more appealing when blended to bulk out this pea dish and are seemingly undetectable.
This simple side dish not only; 1. avoids waste, 2. saves money, but 3. adds nutrition = jackpot!

Waste Not Minted Mushy Peas
Equipment
- Hob
- Blender
Ingredients
- 4 Broccoli Stalks (usually wasted)
- 4 tbsp Peas
- handful Fresh Parsley
- handful Fresh Mint
- ½ tsp Dried Mint
Instructions
- Steam broccoli stalks until soft.
- Steam peas.
- Add half the peas to the broccoli stalks with parsley and mint. Blend until smooth.
- Lightly mash the remaining peas with a fork and stir into the blended mix.
