WHIP IT REAL GOOD!
A nutritious indulgent alternative to dairy, made with a tin of full-fat coconut milk. Choose a good-quality brand which should contain just two ingredients, coconut and water, any additional stabilisers or additives – such as guar or xantham gum – does not allow the cream and water to separate.
And don’t throw out the leftover coconut water – it is full of electrolytes! It can be drunk as-is or used in a smoothie.

Whipped Coconut Cream
Equipment
- Electric Whisk
Ingredients
- 1 tin Full Fat Coconut Milk or Coconut Cream
- 1 tsp Vanilla Extract
Instructions
- Place tin of coconut milk in the fridge overnight.
- Open the tin, the cream will have separated from the water.
- Scoop out the thick cream from the top of the tin into a bowl. Save the coconut water for another use.
- Add in the vanilla extract.
- Using an electric whisk, whip until peaks form. If the cream is too stiff add a little of the coconut water.
