Ingredients

  • 1 Red Onion diced
  • 1 Garlic Clove
  • 1 tbsp Butter or Extra Virgin Olive Oil
  • 100 g Salmon (tinned or fresh)
  • ½ Lemon Zest
  • ½ Lemon Juice
  • handful Parsley
  • 2 tbsp Ground Almonds
  • pinch Salt
  • pinch Pepper

Instructions

  • Preheat oven to 180°C.
  • On a low heat simmer diced red onion in butter or olive oil, when it becomes soft add the garlic.
  • Combine all the ingredients together in a bowl; red onion, garlic, salmon, lemon zest, lemon juice, parsley, ground almonds, salt and pepper.
  • Using hands roll 6 balls and place in an ovenproof dish.
  • Bake for 20-30 minutes, turning half way through until slightly golden.
