Instructions
Cut cherry tomatoes in half and roast at 160°C for 30 minutes.
Dice onions and fry in olive oil for about 10 minutes or until soft.
Slice mushrooms, dice garlic and add to onions, fry for about 5 minutes or until cooked.
Stir in tinned tomatoes, tomato puree, basil, cayenne, salt and pepper. Place lid on top and simmer for 10-15 minutes.
Add sardines with the oil, roasted tomatoes and sundried tomatoes.
Serve with fresh basil leaves.
