Ingredients

  • 1 Egg
  • 1 tbsp Coconut Flour
  • 1 tbsp Ground Almonds
  • 4 tbsp Coconut Milk or Almond Milk
  • 1 tbsp Coconut Oil

Optional Topping

  • handful Blueberries
  • 1 tbsp Coconut Butter

Instructions

  • Whisk all pancake ingredients to combine: egg, coconut flour, ground almond and milk.
  • Heat coconut oil in a frying pan.
  • Pour 2-3 tbsp of mixture into the frying pan, fry for 1-2 minutes, then flip and fry 1-2 minutes on the other side. Makes 4-5 small pancakes.
  • Top with your desired toppings.
