Moroccan Spiced Sweet Potato Cakes

Ingredients

  • 150 g Sweet Potato 2 medium sized
  • 1 Red Onion
  • 1 tsp Cumin
  • pinch Salt
  • pinch Pepper

Instructions

  • Bake sweet potatoes at 160°C for 40-60 minutes.
  • Finely slice the red onion and fry in olive oil until soft.
  • Scoop out the flesh from the sweet potatoes (leaving the skins).
  • Combine the cooked sweet potato, red onion, cumin, salt and pepper. Form 2 patties.
  • Bake in the oven at 160°C for 20-30 minutes, turning half way. Or, fry in a pan for 2-4 minutes on either side until cooked.
