Ingredients

Sweet Potato
2 medium sized

Red Onion

Cumin

Salt
pinch
Pepper
Instructions
Bake sweet potatoes at 160°C for 40-60 minutes.
Finely slice the red onion and fry in olive oil until soft.
Scoop out the flesh from the sweet potatoes (leaving the skins).
Combine the cooked sweet potato, red onion, cumin, salt and pepper. Form 2 patties.
Bake in the oven at 160°C for 20-30 minutes, turning half way. Or, fry in a pan for 2-4 minutes on either side until cooked.
