MINI FISH BITES
Fish and lemon are always a great combination. These little balls are fresh and zesty and bursting with the taste of summer! Oily fish, including salmon, are rich in omega-3 fatty acids, known to support good brain health. Salmon is also an excellent source of vitamins D, B12 and potassium.
Prepared in advance, these bite-size fish balls provide you with a nutritious ready-to-eat snack. They are also great mixed into a delicious, light salad, fabulous on a summer’s day and perfect for picnics.

Zesty Salmon Balls

- Hob
- Oven
Ingredients
- 1 Red Onion diced
- 1 Garlic Clove
- 1 tbsp Butter or Extra Virgin Olive Oil
- 100 g Salmon (tinned or fresh)
- ½ Lemon Zest
- ½ Lemon Juice
- handful Parsley
- 2 tbsp Ground Almonds
- pinch Salt
- pinch Pepper
Instructions
- Preheat oven to 180°C.
- On a low heat simmer diced red onion in butter or olive oil, when it becomes soft add the garlic.
- Combine all the ingredients together in a bowl; red onion, garlic, salmon, lemon zest, lemon juice, parsley, ground almonds, salt and pepper.
- Using hands roll 6 balls and place in an ovenproof dish.
- Bake for 20-30 minutes, turning half way through until slightly golden.
